I said I was going to put this recipe up on the blog ages ago. Life got insane, so I’m sorry for the delay. But it’s not too late to make these yummy apple cake bars. Many people are already getting ready for Christmas, but it still feels like fall here. It’s the perfect time to make something warm, cozy, and full of delicious apples.
My mom sent me this recipe when I went apple picking in late September. She found it in her local Kroger magazine. so I can’t take credit for the recipe. I’ve been sharing it around with my girlfriends because it’s so good! My favorite things about this apple cake bars recipe is that it’s not too sweet. Personally, when I bake something that turns out sickly sweet, I’m disappointed. These bars are the perfect blend of seasonal apple slices, warm walnut chunks, and cinnamon.
Overall, they’re pretty simple to make too. The hardest part is slicing the apples nice and thin. Once that’s done, it’s smooth sailing to the best apple cake bars! Keep reading for the recipe and let me know if you end up baking them!

Apple Cake Bars
- 3 eggs
- 1 3/4 cups sugar
- 1 cup vegetable oil
- 2 cups flour
- 1 tsp. cinnamon
- 1 tsp. salt
- 1 tsp. baking soda
- 3 cups peeled, thinly sliced apples (tart varieties like granny smith work best)
- 1 cup chopped walnuts
- Confectioners’ sugar (optional)
- Vanilla ice cream (optional)
- Preheat over to 350°F. Grease 9×13-inch baking pan
- In large bowl, beat together eggs, sugar, and oil until lightly fluffy
- Stir in flour, cinnamon, salt, and baking soda. Gently fold in apple slices and nuts
- Transfer mixture to baking pan. Bake ~45 minutes or until toothpick inserted in center comes out clean
- Sprinkle with confectioners’ sugar while warm and serve with a steaming cup of coffee. Or add a scoop of vanilla ice cream on top!
- Store leftovers in an airtight container or throw them in the freezer for longevity
